We use the term vegan from a health perspective. We do not use meat of any kind including, fish, seafood, chicken, beef, or anything that had a mother. We also do not use milk, cheese, cream or any other dairy product. This cookbook is completely dairy free. The recipes also do not contain any eggs. In addition, the recipes do not call for animal fats like lard or butter.
While this cookbook certainly is vegetarian it is more limited than most vegetarian cookbooks due to the avoidance of dairy products and eggs. We use the term vegan because it means that we avoid those items.
Some vegans who are promoting animal rights do not use honey. Other vegans who are into the health perspective do use honey. We came to vegan from a dietary perspective and not an animal rights perspective. We do use honey.
Those vegans who choose to avoid honey can either use a substitute sweetner like Agave or something else, or avoid the recipes calling for honey.
There seems to be more than one use of the term vegan. This cookbook is vegan from the broader definition, only from the dietary preference, not from the ideological perspective or lifestyle. Others may use a tighter definition of vegan to avoid honey made by insects, and avoid wearing animal products like leather.
This cookbook is vegan in the broader sense only.
